Apple pie tartlets

Apple Pie Tartlets

I've just tried these gorgeous tartlets from Pasticci & Pasticcini di Mimma and modified them for a vegan wonderful result! Amazing!

Ingredients:

    Preparation:

    Prepare the vegan custard and let it cool down.

    Prepare the shortbread.

    Cut the apple thinly leaving some of the peel visible.

    In a frying pan place the sugar, the cut apple and the lemon. Cook them until they are tender, but not completely.  



    Place the shortbread in a mini-muffin or muffin tray. 

    Fill half of the space with the custard and then add the apples. Model them into a rose shape. 

    Cook them in a preheated oven at 180ºC for half a hour. They come out beautiful!
