CHOCOLATE CUPCAKES
Recipe from chow.com modified just a bit.

INGREDIENTS:
- 1 cup
- soy milk
- 1 teaspoon apple OR rise vinegar
- 3/4 cup sugar
- 1/3 cup vegetable oil
- 100 g dark chocolate
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
PREPARATION:
Preheat oven to 180ºC.
Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil to the soy milk mixture and beat until foamy. Add flour, cocoa, baking soda and salt. Beat until no large lumps remain and finally add the chocolate, which you previouse melted (I normally place it in the microwave in a small cup with a tiny bit of soya milk in it for about 20 seconds).
Pour into liners, filling almost all the muffin. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.
