BANANA MUFFINS

BANANA MUFFINS

Recipe from vegetarian.about modified just a bit

INGREDIENTS:


  1. 3 very ripe bananas
  2. 1/4 cup oil 
  3. 1 cup sugar
  4. 1.5 cups flour
  5. 1 tsp salt
  6. 1 tsp baking soda
  7. 1 Tsp apple or rice vinegar
  8. Soya milk (or rise, almond, etc.)


PREPARATION:

Pre-heat oven to 180ºC.
In a large bowl, mash the bananas with a fork till soft. Add the oil and sugar and cream together. Then add flour, salt, baking soda and vinegar. Combine the mixture, stirring gently, and add soya milk until the desire density is reached (not too liquid not too doughy).
Fill each muffin with batter almost until it is full. Bake for about 20 minutes, or until a toothpick inserted into a muffin comes out clean.


P.D. You can fill them using a baking syringe with jam, vegan custard, chocolate!!!
