SINGLE CREAM

SINGLE CREAM

In Italy we use single cream often for pasta sauces, like béschamel. 
You can use it to make a mushroom and garlic sauce for the pasta; or walnut and asparagus; seitan, garlic and mushroom (I call it vegan carbonara); uff...millions more delicious pasta sauces :)

Ingredients:
  • 100 g Tofu
  • 2 Tbs extra virgin olive oil
  • 2-3 Tbs water

Preparation:

Mix all the ingredient together with a mixer or a stick blender until creamy. You might need to add some more water, depending on the type of tofu you use.

really easy!!!

N.B. Some people do it just with soya milk and add more oil until thick, in that case the oil has to be added really gently, as per mayonnaise recipe.
