CARROT CAKE


CARROT CAKE 

(recipe from Germany)

Recipe from chefcoch modified just a bit.

INGREDIENTS:


  • 400 g of carrots (peeled and grounded - with a mixer or a thin cutter)
  • 300 g flour (high grade or gluten free flour)
  • 180 g sugar
  • 200 g vegetable oil
  • 1 lemon (the skin and the juice)
  • Optional: grounded nuts and vanilla (a teaspoon)
  • backing soda (or use flour with self raising agent on it)
  • for the topping dark chocolate or lemon icing


PREPARATION:

Pre-heat oven to 180ºC.

Mix all the ingredient together (the mixture it will not be really liquid, it is dense almost like a dough). Place the mixture in to a backing pan with baking paper on it.

Place it in the oven at 180ªC for 40 minutes (depends of the oven though).

Really easy and yummy!
