CORN FRITTERS

CORN FRITTERS

Delicious Thai recipe from the vegan dad modified just a bit!

INGREDIENTS:

  • 2 cup of frozen corn or fresh and cooked
  • 1 tsp curry paste
  • 1/2 cup chickpea flour
  • 1/2 cup high all purpose flour
  • 2 Tbs cornstarch
  • 3 minced garlics
  • 1/4 cup coriander
  • 1 Tbs soy sauce
  • salt, pepper
  • water
  • oil for deep frying

PREPARATION:

Mix together in a bowl all the dry ingredients. Add gently starting from the centre and using a spoon the soy sauce and the curry paste dissolved in a bit of water. Add as much water as you need to make a paste that is not to liquid.

Add enough oil in a fry pan in order to deep fry the fritters. 
The oil needs to be in hot temperature.

Using two table spoons place different portions of fritters in the pan and turn them when they reach a golden colour.

Serve the fritters with sweet and chilli sauce.
