Tabbouleh

My Tabbouleh

INGREDIENTS:


  • 2 cups couscous
  • 2 cups of water
  • 1/2 of a medium red onion
  • 1 medium red pepper
  • 1 cup of corn
  • 2 medium tomates
  • extra virgin olive oil
  • 1 lemon
  • grounded black pepper
  • salt
  • coriander

PREPARATION:

N.B. The most important step that will influence the result of all your couscous recipe will depend of its initial preparation. The best outcomes are obtained, if you have a coucous pot in order to steam it. 

Otherwise, start washing the couscous in cold water, mixing the grain properly with the water. Then, drain it. Stir it well and add then the hot water. Add some salt to taste and leave it to repose until the couscous absorbed all the water. 

After that, stir it again vigorously adding the extra virgin olive oil, the lemon juice and the grounded pepper to taste. 

Cut all the vegetables in small pieces and add them and the spices to the couscous. Mix all properly again.

Add some more salt, oil, pepper or lemon juice, depending on your taste.

Keep it in the fridge to serve it cold.
