Nasi Goreng

Fried Rice

INGREDIENTS:

  • 2 cups long grain rice or non-sticky rice (400 g)
  • extra virgin olive oil
  • 1 red onion
  • 1 onion
  • tofu
  • 1 fresh green chili
  • 2 tsp fresh chopped ginger
  • 2 green peppers
  • 1 tsp turmeric
  • 3 medium tomatoes
  • 1 tsp sugar
  • 2 Tbs tamarind sauce 
  • soya sauce

PREPARATION:

Wash the rice. Cook it in salted water for 15 minutes 

N.B. follow the rice instruction carefully! we don't want it to be over cooked, for this recipe we need well separated grain of rice no sticky rice.

In a large frypan (better if it is wok-type pan) place some oil and when it is warm add the onion finely sliced and the tofu cut in small cubes. Add some salt and pepper to flavour the tofu and fry until it is all golden. Place it aside.

Add some more oil to the frypan and when it is warm add the finely chopped garlic, the peppers, the green chili, the ginger and the turmeric. Fry until garlic is golden. Add the tomatoes and the sugar and fry for another couple of minutes. Add the rise and the tamarind and fry to dry it up. Stir carefully. Finally, add soya sauce and stir vigourously.
