Lemon Marmelade

Lemon Marmalade


Recipe from Italy by Giallo Zafferano modified just a bit

INGREDIENTS:

  • Lemons
  • Sugar
  • Water

PREPARATION:

Wash the lemons and pinch them with a knife; boil the water in a big pot; add the lemons; cook them for 20 minutes and then drain them.

Process the lemons just a little bit using a mixer or better a stick-mixer. Be careful though, you don't want to mash them completely!

Weight the lemons. Add the same weight of sugar and the same weight of water.

Cook for other 20 minutes stirring now and then or cook until taking a teaspoon of the marmalade  you notice that it is sticky enough after a few seconds.
