"Pizzi" Bread

Mediterranean Bread

INGREDIENTS:

  • 500 ml water
  • 2 Tbs soy milk
  • 30 ml extra virgin olive oil
  • 200 g whole peeled tomatoes
  • 1/2 cup pit-less olives 
  • 1 sliced red onion
  • 1 Tbs cappers 
  • 2 tsp salt
  • some grounded black pepper
  • 2 Tbs sugar
  • 650 g high grade flour
  • 2 tsp yeast

PREPARATION:

Place the dry ingredient in a bowl and mix them. Then, starting from the centre add the liquid ingredients and mix them together carefully. I normally use a fork for that and then I finish with my hands until obtaining an elastic ball.

Leave it to rise up to 1.5 hour.

Place it in preheated hove at 200ºC for about 1 hour

N.B. I made this recipe here with a bread maker. It came out brilliant! :)
